Sajne Phuler Bora (Drumstick Flowers Fritters)

It was around 7.30 am in the morning. I dropped my daughter in her school and headed straight to Lake Market. It's always a sheer joy for me when I visit the local markets. I feel nostalgic and miss my home. I visualise my garden and all the home-grown vegetables, fruits and flowers. I see my father or my mother busy in the garden, plucking up the vegetables and the joy of contentment in their faces. I smell back my home again. This time, in the morning, is kind of a blissful moment for me. It's like revealing a mystery box every time at my each visit. Say it like getting introduced to a new kind of vegetable/ fruit or flower or learning a new recipe from your daily vegetable or fish vendors. I love the mayhem of the market and exploring the nook and corner of this place. The fresh and colourful fruits and veggies will be seen inviting and seductively shining on the big bamboo baskets. People with their sneakers on will be seen busy with their daily marketing. The fish market will look totally chaotic. All set to fetch for the fresh fish at a bargain price. The flower sellers will be seen exhibiting their collection of vibrant flowers and bouquets. Every time I wander by the array of flower stalls on the pavement, I get a weird feeling. I feel happy to see the emblazoned pavements and the freshness that infusing a kind of purity in the heart. On the other hand, I feel hollowed from the bottom of my heart as again I miss my home, my blooming flower garden. I pass by the chaiwalahs and see them busy in crouching over their stove, hurrying to satisfy the impatient customers. I love to pass by the dust, dirt, flies and diesel fumes swarming in from the main road. And again every morning I fall in love with the city ignoring all the negative sides that convince my mind every night to leave the city forever. I fall in love with Kolkata again and again.

 So the other day I found my daily vegetable seller was selling a bag full of Sajne phul or Drumstick Flowers. He might be selling quite often but I never paid that much attention to it or it always skipped by eyes. Now a day, I am introducing different kinds of vegetables to my daughter which have more food values. And at the same time, I have restricted our lunch meal to typical Bengali meal that should start  with Something bitter and ends with something sweet. You all must be knowing that a Bengali platter would not be completed if there is no Bhaja (some deep fried items) to accompany with the Dal. Therefore to go with the Bhaja (some deep fried items), we have always some vegetables to fry or edible leaves or some edible flowers. Recently I have started collecting the edible flowers and introducing them to my daughter. So when my eyes got fixed on the Sajne phul or Drumstick Flowers, I didn't hesitate for a single second but bought some. I started to recollect the memory of the big Drumstick or Moringa tree at my home, which every time gets bloomed with the profusion of white flowers and then with the drumstick pods. The long pods hanging down from the tree were always a cause for celebration time for my parents. But for me, it was like a nightmare as I never liked Drumsticks and moreover what used to annoy me more were the hairy stinging caterpillars what we call in Bengali - ShuoNpoka. Once the tree is all bloomed with flowers the caterpillars will nestle up clinging to the tree bark and then it will swarm around/ inside our house. It used to get found in our clothes or on our books and almost everywhere. One single contact with the singing caterpillars means to end up itching and scratching yourself for hours. But my parents would never cut the Drumstick/ Moringa tree. What the gardener used to do, he used to set fire on a stick to burn the caterpillars. And I used to dislike so much that site. Anyways, the flower and the pods from the drumstick tree were religiously and ceremoniously used to get cooked in my mom's kitchen,  but I never allowed them to reach my plate. Even I had never paid any kind of interest to know how those used to get cooked. Cooking is my passion since childhood but that is only restricted in making some jazzy party dishes or the dishes after my taste. Now when I became a mother, I stepped in my mother's shoe and trying each day to replicate my mother's kitchen in my kitchen. Moreover, the food blogger inside me is always tending to try out new things every time and to learn more of the food culture. So when I cooked the Sajne Phuler Bora (Drumstick Flowers Fritters) {which is one of the common items in a Bengali kitchen}, to my surprise I loved it and my daughter enjoyed it. I was thrilled with the fact that I had introduced Sajne Phul (Drumstick Flowers) in my kitchen. But my parents had a shock to believe that their daughter had changed so much. To talk about the nutritional value of  Sajne Phul (Drumstick Flowers), it is high with Vitamin A, Vitamin C, Calcium, iron, copper, manganese, zinc, selenium, and magnesium. (Source -Here).  
 
 Sajne Phuler Bora (Drumstick Flowers Fritters)
{Yeilds 14- 15 Fritters}
Ingredients:
Sajne Phul / Drumstick Flowers - 100gm
Rice Flour - 2 tbspn heaped
Besan / Bengal Gram Flour - 2 tbspn heaped
Turmeric Powder - A pinch
Baking Soda - a pinch (Optional)
Salt as per taste
Kalo Jeera/ Nigella seeds - 1/4 tspn (See notes #2)
Mustard Oil - enough for deep frying
Water as per requirement
Method:
1. Wash the Sajne Phul / Drumstick Flowers thoroughly.
2. Take a bowl add all the dry ingredients. Mix well. Then add water slowly to make a semi thick batter mix well. Make sure that there is no lump remaining.
3. Now add the Sajne Phul / Drumstick Flowers mix well. The mixture should not be very dry or thick. If required then add some more water. 
4. Heat enough oil in a Kadai so that you can deep fry the fritters. Make sure the oil is piped hot before you start frying. Take a small ping-pong ball size portion of the batter and gently put in the oil. Keep on adding more portions to feel up the remaining space full of oil in Kadai.
5. Fry in medium flame until those turn brown. Take them out and put them a kitchen Towel to absorb the excess oil. Serve hot with the lunch meal or as a tea time snack.
Notes:
1. Sajne Phul / Drumstick Flowers can be cooked in many ways. One can make curry out of it by adding mustard paste and cubed potatoes. It goes well with the prawns. And one famous dish out of it is Bati Chachari (cooked with seasonal vegetables.)
2. I have used here Nigella Seeds. But I prefer Ajwain or Caraway seeds in the fritters.

Mushroom Baby-corn Muffin

You must have read in my earlier post that preparing lunchbox for my 8 year old girl has become a nightmare for me. The reason, what ever or how much tasty dishes I share in her lunch box it will be surely coming back home only half eaten. I started spending sleepless nights - 6 hrs +2 hours stay away from home with such a little food consumption, must be badly affecting the lil one's health. So  in the evenings I started making myself occupied by giving trials with different snack idea. If the lil one approves then 'BINGO'.. Next day that will go in her tiffin box. The other day I made these little savoury muffins that did tickle my princess's taste bud and to my surprise the next day I found her tiffin box empty. Not only she but her friends loved it so much and now I have to send few extra so that my princess and her friends can have a snack party everyday. So here is recipe of Mushroom Baby-corn Muffin:
Ingredients
{Yeilds - 3-4 muffin (medium size)}
Egg - 2
Flour - 1 tbspn
Mushroom & Baby Corn - 1/2 cup chopped
Onion- 1/2 of one small chopped
Cream Cheese - 1 tbspn (Optional - See Notes)
Pizza Cheese - 1 tbspn (See Notes)
Nutmeg powder- a pinch (See Notes)
Tobasco/ Chili Sauce - 3 to 4 drops or as per taste.
Salt, Sugar & Black Pepper Powder - As per taste
Butter - 1 tspn
Method
1. Whisk two eggs and flour, add a pinch of salt and keep aside.
2. Heat a pan . Add butter, let it melt down then add garlic. Saute for a minute.
3. Add chopped onion. Fry them for a couple of minutes.
4. Add the Mushroom and Baby corn. Fry for 2 minutes more. 
5. Add salt, pepper, sugar and cream cheese.
6. Cook then in a low flame until the cream cheese gets melted and well mixed.
7. Sprinkle the nutmeg powder, mix well.
8. Cool the mixture for a while then add it with the egg mixture. Add the Pizza cheese and Tobasco/ chili sauce too.
9. Now take 3- 4 muffin cups. Pour the mixture evenly in each cup.
10. Bake for 15 to 20 minutes at 180 degree C.
11. Serve warm with some dips/ sauce.
Notes:
1. One can mix other vegetables too.
2.  One can add chicken/ bacon or sausages to make it more tasty.
3. To make Nutmeg Powder just take the nutmeg and grate it in a fine grater.
4. I had Britannia Cream cheese at home so used it here. But if it one doesn't have any just increase the cheese portion.
5. Instead of Pizza cheese,  Amul cheese cube can also be used.

Chicken Hotdog Stuffed Buns

  The morning of Kolkata is totally different as it looks in  the busy hours.  It is beautiful, serene and romantic. Less number of vehicles on the road and less crowded. Almost no honking - the morning always weaves a different story. My daily route to romance with the morning is passing by  the Rabindra Sarobar, Southern Avenue, Gol  Park then the Gariahaat Crossing to Kashba. The morning fresh breeze brushes my hair, kisses my face with a tender touch.  I keep on inhaling the fresh breath to store it for the whole day as much as I can before another side of Kolkata faces off pretty fast soon. Surprisingly I get to hear the birds chirping when I pass through the grovy and bushy lanes of Southern Avenue. I see all the young & old  on the road taking the pleasure of a morning walk. Some relaxing on a "Cutting Chai" or sipping hot tea in a Khuri ( small container made out of clay especially for serving tea in Bengal) or some drinking coconut water.  You will see the JhaNkawala Shabjiwala/ Folwala (The vendors who sell fruits/vegetables in a basket) busy in selling their stuffs to the morning passersby and with a hope in their eyes to gain profit as much as they can for the day.  Some devotees will be seen busy in enchanting the Mantras in front of Lake Kalibari. Whoever crosses through the road they will surely slow down their cars to show their respect and faith for god in front of the Temple.  A small and quick salutation will be seen touching the forehead then the chest and again regaining the speed to race with the traffic. I love this lane though I hate so many cars are parked blocking a lane. But here I get to see different kinds of busy morning and people where people are busy in relaxation. They are enjoying their morning walks or chatting with their everyday walking partners or laughing aloud on some jokes.  My car passes by and I keep on watching and storing all the stories of the different Kolkata lanes and the different scenarios in the weekdays. The Gariahat crossing tells a different story. It was then calm and quite. Only the cars and a handful of passersby will be seen. All the stores are deep in their somberness. A smile spreads soon after I cross this road. I smile at the tranquility of this place which in a few hours will be turning in to one of the craziest roads where it will be hard to drive through the road. All the passersby will come on road to either cross the road or to catch a bus/taxi/auto. The honking sounds from each and every vehicle will make your life like a hell. The traffic guards will be trying their best to make the traffic run smooth. But there will be no change. It will remain as busy and unorganized as it is. And here I should blame the people who are always prone to dissuade to make the city beautiful. Sigh...
The other day we the parents dropped lil K at her school and enjoying the drive way back home recollecting all the old new stories of our life. The weather was cloudy and the cool breeze made it more romantic to float down in a realm of romanticism. We crossed the ever enchanting Rabindra Sarobar Bridge and heading towards the Prince Anwar Shah Crossing. All of a sudden the Hubby Man hold his break and slowed down the car. A mother cyclist was carrying her little daughter on the back carrier of the cycle, crossing this speedy traffic prone road reluctantly. She crossed our car and the Hubby Man was just about to gear up the speed when we heard a bloodcurdling screeching sound of someone's car who pressed the emergency break and we saw the Mother and the child with a loud shout fell from the cycle. The Driver of that car and the Hubby Man stopped the car and rushed to them. I was sitting standstill and trying to understand what exactly happened in these last few seconds.  I got down from the car and went to the spot. By God's grace both the mother and the kid were fine. It was the driver of the car who had actually saved them. I saw my husband scolding that lady a lot for her recklessness. Frankly speaking I was feeling like slapping the lady for how irresponsible she could be. The way, she was crossing the road as if it was a playground totally ignoring the speedy moving cars.  Being a mother it is the first responsibility to protect your child and to teach all the rules & regulations of life. If we keep on ignoring them then in long run why to blame the kid. And moreover if something would have happened to them, everybody would blame the driver and might be beaten him to death, where the truth was the driver was actually the saviour. With a pounding heart all of us started moving to each other's destination.  The sweet morning within a fraction of second changed in to bitterness. And for few days I was not able to bear the fact of the recklessness of the mother and dreading the fact what worst could have happened. We always blame to reckless driving but every day I travel to and fro 80 kms and most of the time it catches my notice that the passersby are most of the time at fault.

Now let us move to today's recipe: Chicken Hotdog Stuffed Buns. It is very filling and healthy too. For the filling you can go wild with anything after your mind.

Ingredients:
(Yields 4-5 buns)
For the buns:
Flour - 1 cup
Instant yeast-  A bit less than 1 tspn
Warm Milk - 1/2 - 3/4 cup (More or less)
Olive oil - 2 table spoon
Salt - 1/4 tspn
Sugar - 1 tspn
Butter - 1 -2 tbspn
Sesame Seeds - 1 tbspn

For the Stuffing:
Chicken Hotdog - 2-3
Slices Onion - 1 small
Coloured bell pepper sliced - 1/2 cup
Chopped garlic - 2 tspn
Ginger paste - 1/2 tspn
Tomato Sauce - 1 tbspn
Worcestershire sauce - 1 tspn
Grated cheese - 1/2 cup (Optional)
Oil- 1 tbspn
Salt and Sugar ad per taste
Method:
Make the stuffing: 
Heat oil in the pan. Add the garlic and fry. Add the onion saute for a while then add all the other ingrediants apart from the cheese. Fry for few minutes on flame and then take off  from the stove. Make sure it is dry.
Make the buns:

  1. Add all the dry ingredients with the flour. Mix well. Add warm milk slowly at a time and keep on needing. Don't pour all the milk at one time. One has to make a semi soft dough so add milk as per requirement.
  2. Keep on kneading at least for 10 minutes. Then take a big bowl and cover the dough with a damp cloth or cling fling  and let  rise for 1 hour. After one hour again knead back the dough for 3-4 minutes and then again keep it for 40-45 minutes. Now take the dough and make 4-5 balls (Or more or less) out of it. Make sure the balls should have enough size to be stuffed.
  3. Roll each ball in a small disc and then put the stuffing and cheese in it. And then join  together the edges and seal nicely and roll in to a smooth ball again. You can add a bit oil on your palm to avoid the stickiness. Make a nicely shaped buns rolling in between the palms.
  4. Pre- heat the oven at 200 C for 6-7 minutes.
  5. Take a baking tray. Grease it and put the buns. Brush the buns with melted butter and top with some sesame seeds on each bun.
  6. Bake for 20-30 minutes or until the buns gets a nice brown tinge and the top is crispy enough.  Take it out and enjoy.
Note:
1. You can use egg white too to brush the top of the buns to get a nice brown top while baking.
2. For the stuffing anything can be added. You can go for a veg or a non- veg too.

I clicked it on Program mode. The ISO was 1600. I shot it at night time. It was clicked in normal Tube Light that we had in every house. The light was coming from far left and I had kept the right side dark. From my experience - dark background for night shoots suits best.

Stuffed Omelette

"What you have Chhotu?" 
Sandy was thoroughly drenched. There was no point of taking any shelter anymore. But he was starving for a cup of tea or coffee to warm up his tired limbs and naturally something to eat. He was on his way back home and hitching for last 20 minutes for a taxi. And moreover the sudden rain had ruined his entire romantic mood that was weaving the future he wanted to spend with Sai. 
"Namaste Dada!!! What you want?" The boy popped up from this dark shadowy roadside snack bar. Sandy was waiting outside and a bit in hesitant whether to enter or not. But the jocund welcome tone of the boy made him comfortable to reserve a corner sit for him.
"First serve me a hot tea and something to eat." Sandy replied.
"Ok. Then try our Egg Noodles.." Cackled the boy.
Sandy just wanted something to eat and the words -Egg Noddles, made his stomach rumbled with a jiggle. He nodded his head and ordered to bring it quickly. He chose a corner table next to the door. So that the dripping water drops from his body could flow down through the door, brushing the wet steps and then get mingled in the water logged street. Ah, this is his city of joy, where a 10 minutes heavy rain turns a dry road into a creek. He could see the two way traffic moving in slow space splashing the water which is curling down again to kiss the stagnant water. 
"Ah, Sai where are you!!!" Sandy felt a bolted emotion suddenly choked his throat. He was missing her so much. If she was here she would be jumping like a little girl and sharing her single precious excitement while enjoying the incessant rain and the music of the droplets paring with the splashing water. She loves rain......Sandy took out his phone and clicked a picture and sent Sai through whatsapp. A sad smiley blinked up right away and then:
"Missing me?"
"Hun.."
"Love you.."
"Love you too.."
"Dada your tea and Egg Noodles.." Chhotu disrupted the song of the love birds and served the ordered dish.
"What is this?, I ordered for Egg Noodles." Sandy with a surprised face asked the boy.
The boy jovially replied, "Are Dada this is the special Egg Noodles. Once you eat, you will ask for more." The boy vanished inside in no time. 
Sandy took a look around the room. It was quite full. All were busy in chatting or engaged with their phones. Munching, sipping and gulping. Sandy's face reflected a kind of disappointment. Though he was an egg lover, right now he was not in a mood to have an Omlette. He was craving more for the Egg Noodles. His mind was slowly getting heated up. He clicked a picture of the dish and sent it to Sai:
"At which angle will you call it Egg Noodles??"
"What!! Are you kidding?? This is an Omlette... hahaha "
"I ordered for the famous Egg Noodles of this place and this is what I was served."
"Hahahaha...Enjoy..."
Sandy was very hungry and whatever was served in front of him had started to lure him. He cut a piece and forked it to make a way to his mouth. Oh, my what was this peeping out!!! Noodles!!!! Therefore the Omlette was looking so fatty than the usual one. A smile twinkled in his face. He took a bigger piece along with the noodles and then he closed his eyes. A sheer joy of happiness shivered down through his veins. He had never tasted such a tasty dish before in his life. 
"Sai, it is Egg Noodles!!!! And it is delicious. I will surely bring you here to taste it."
"What??"
"I mean it is Egg Noodles or rather I should say Stuffed Omlette with noodles."
"Hahahahaha.....So lesson learnt don't make assumption by name. Taste it and then decide... ;) :P"
Sandy finished his plate in no time. And the hot tea helped him to regain back his energy again to start his struggle to reach home through his water logged pathway.
"Chhotu, the Egg Noodles was awesome."
"I told you..It is the famous dish here.." The happy boy bid good bye to Sandy holding a tip of ten rupees in his hand.

Ingredients:
You need some stuffing. Her I have taken Vegetable Noodles (The normal way we make at home)
For each roll we need 2 eggs
Grated Cheese (as per requirement)
Tomato Sauce
Salt to taste
Black pepper powder
Oil/butter for frying
Method:
1. Beat two eggs nicely. Ad Salt and Black pepper powder as per taste.
2. Take a non-stick pan. Heat Oil/Butter and then pour the Egg. Make sure to spread it evenly in a round big circle. 
3. In a low flame let it cook till the surface looks done. Now take small portion of the stuffing (Here I added homemade noodles) and line vertically. Leave a little space on the top and the bottom. Top some grated cheese on it. In skilled hand roll the omlette and wrap the noodles. Let it be done for another couple of minutes. And then serve with some ketchup or salad.

Notes:
1. You can make many variations of it. Different kinds of stuffing can me made, like fried rice, stir fried vegetables, stir fried sausages, dry minced chicken or some stir fried boneless chicken  etc.
2. If you want to avoid the egg yolk then just make it with egg whites. It comes out pretty well. I often make it for my parents and in-laws as they are prone to cholesterol. 
 Nutritional Value:
For the kids it is very healthy and they like it when you serve it with the variations mentioned above. Along with the egg one can get the supplemented proteins, vitamins along through the vegetables too.

Bread Roll- My first Guest Post



This one is the first post in this year. So let me first wish you all Happy New Year. Am I late to wish? May be, but since the year started I didn't feel that felicity what I usually felt through the past years. Yes, this year didn't start with a sweet tune, rather with an agitated mind where a kind of helplessness shattered me down. The heart-rending incident in Connecticut, USA and the heinous crime in Delhi, India, just when, everybody was wrapping up the old one and planning to welcome a bright new year with full vigour. Human psychology is a perplexed labyrinth where what takes birth and how it gets acted can't be understood with any kind of meticulous research.  What I can say about me is, I am very very sad, scared and disturbed by the acts of some brainsick persons who are hovering around and can face off any time.
 Ok, now let me give you some good news now. I am much elated to share my first Guest Post for Jagruti and her Blog- Jagruti's Cooking Odyssey. I never thought that my long waited dream would shine so early. And to make my dream come true, I heartily thank JagrutiJagruti's blog surely does not need any introduction, but those who have not visited her space yet, don't waste any minute and go visit her. Her blog is elaborated with exotic vegan dishes. As a person she is too sweet and as a friend she is an asset.
On her request I prepared Bread Roll, which is very easy to make and very tasty too. Mainly the kids will devour it with happy hearted. The best part of it is, one can customize it with lot of variations. Like- to make it non-veg : one can add minced chicken, boiled egg or fish . One can also make the stuffing with lot of boiled veggies etc.

Salmon Florentine Phyllo Cups

Wish you all Happy and Healthy New Year. Little late, but not so late to cheer. How did you start your new year? Did you wait till the midnight bell melodically sings the new year song? I missed the auspicious moment of the shift. But welcome the brand new year with a blast and with new promises. Last year the most remarkable thing and a long lasted dream had been fulfilled, that was, I tried Ice Skating. And on the same time I also promised to never wear the Ice skates again in my life.
From my childhood skating was one of the dreams which I always wanted to try for. But that never materialized as both my mom and dad are too scared with the thought that if I skate I am going to break my bones. I loved seeing the Ice skating ballets in the television and used to spend many nights dreaming myself skating and dancing with some elegant moves.

Any way, after coming to USA I felt my dream a bit closer and my husband not so rigid in this affair. Moreover he is also quite interested in Ice skating. Last year when the winter knocked the door and the artificial Ice Skating rings built up in various places, we decided to try our potentiality in this field. Last year the day before Christmas we went to Sea world (famous theme park for the sea creatures and shows) and the first thing we did, bought the tickets to Ice Skate.

Whenever I have seen people on the ring so fleetly skating, the moves gave me the feeling of a free bird flying in the sky. The gestures of the moves always made me to feel the taste of freedom. A freedom, free form every thing just tasting the beauty of life and the rhythm of romance. This kind of sublime feeling I always wanted to feel and taste.

Before starting this new action I am too confident and determined that when I am on floor I am going to win the podium. I will just turn in to a swan princess and will make everybody stuck dumb with the graceful dancing poses. But all the confidence and determination just went in vain within a second when I wore the Skate shoes and put the first step in the Ice skating ring. I stayed in the ring for less than an hour and was not able to leave my hands from the side bars. I never thought in my dreams that the floor could be so slippery. I never thought in my dream that I would not be able to step a single move without holding any thing. On the other hand my husband and my daughter they tried few steps without any support. But the over confident Me, skated many steps, only holding firmly the side railings. A weird scare was injected in my body, in my blood and all my limbs had a eldritch sensation which kept on giving me goose bumps and made me weak in every move. After coming out from the ring I felt like I got a new life again. I felt so relieved like I had survived from a great danger. I promised that not in my remaining days I am going to try this action again. But I will surely train my daughter in Ice Skating and will see me through her rocking the floor with majesty.

In this new year I made a new dish which I have never made before and would liked to share with everybody.

SALMON FLORENTINE PHYLLO CUPS
(Recipe adapted from www.athensfoods.com)

Ingredients:-
Salmon Fillet- 1/2 lb
Spinach chopped- 1 cup
Tomato chopped- 1 medium sized
Tomato - 12 sliced in thin pieces
Garlic chopped- 1 tea spoon
Ginger paste- 1 tea spoon
Onion chopped- 1/2 cup
Vinegar- 1 tea spoon
Plum Sauce- 1 table spoon
Salt , Sugar and Black Pepper- As per taste
Oil- 1 table spoon
Shredded cheese- 3/4 cup
Phyllo sheet- 1 packet

Method:-
1. Boil the Salmon Fillet with little bit of salt and the vinegar. Drain the fillet and reserve.
2. In a skillet heat the oil and then add the chopped garlic. Sauté it till brown then add the onion. Let the onion fry till it turns brown add the tomato and the garlic paste. When the tomato will become soft add the spinach. Cook it until it gets tender.
3. Mash the salmon fillet with a fork and add it to the spinach mixture. Add salt, sugar pepper and plum sauce and cook till it gets a dry texture. Cool it and then chill.

4. Take the Phyllo sheet. There are two rolls in the packet. Unroll the sheet. I cut each unrolled sheet in six squares. You will get total 12 squares.
5. Pre heat the oven in 350 degree F.
6. Take a muffin pan. Grease it and gently put each phyllo square inside the cups with a light press. Now put the Salmon filling in each cup with an approx measurement of 1 table spoon. On top of each cup put a sliced Tomato.
7. Bake for 25mnts. Then take the trey out and put the cheese on the top of each cup and again bake for 10-15mnts more till the phyllo cups turn brown.
8. Serve hot with sauce and salad.

Note:-

1. I have done a mistake. I put the cheese right in the beginning, I started baking the cups. For that reason the cheese became over cooked and didn't get the melted creamy taste. Please make sure to put the cheese before 10 mnts of the total given  baking time.
2.You can serve it as snacks or starter and you can also devour it as the main meal.
3.Please read the instructions well on the packet of the Phyllo sheets before using it.

Pancake Roll

I prepared and took the snaps of the Pancake Roll, when Priya of Priya's Easy n Tasty Recipes, announced the Pancake event, a decade back. And then I totally forgot to post it and to send it for the event. I am like this. Due to my forgetfulness I rarely participate in the events. Today while spending few moments with the old memories I suddenly found the snaps which I treasured very nicely in my web album. Before I forget again I am posting it right now. Priya this is for you. This is a very common breakfast at our home. Both my daughter and hubby like it very much. Very easy to make and taste too good.I think it is also common in your kitchen too. Let me share how I make.

Ingredients:-
Pancake:
• Flour-1/2 cup(approx)
• Milk-1/2 cup
• 2 eggs
• Salt- As per taste
• Sugar- As per taste

Filling:
• Chopped Tomato, carrot and cucumber-2 cups
• Mayonnaise- 1 table spoon
• Italian seasoning- As per taste
• Black pepper-As per taste
• Grated cheese -1/2 cup (optional)
• Salt & Sugar-As per taste

Butter/oil to fry
Method:-
1. Mix all the ingredients written under pancake and make a nice and smooth batter. If you feel its too watery then add little bit of flour more. Or if you think its too thick then add little bit of milk.
2. In another bow mix all the ingredients written under Filling. And mix well together.
3. Heat oil/butter in a non stick pan. Pour the batter onto the pan, using approximately 1/4 cup for each pancake. Flip the other side when its done. Take a spoon full of filling and pour in a line on the pancake. Then fold the right side then the left side in roll shape.
4. Serve hot with sauce.

Stuffed Mini Boule


Stuffed Mini Boule or in simple terms Stuffed Bread is one of the hot pot items in my Food Menu. Just a couple of days back I prepared the dish after a long gap. My husband relishes and enjoys the dish to its full pit always. This is the first time, I served it to my daughter and to my wonder she finishes her plate just in no time. Now a day I mainly cook the dishes placing myself to my daughter’s place, what she will like and what will be healthy for her and of course it should take the shortest time to prepare.This dish takes very little time to prepare. The time what it takes is the baking time. It is a very full meal which can be served as a breakfast, a lunch or as a dinner too. The crispy and crunchy taste of the bread blend marvellously with the soft and spongy bite of the stuffing. I usually prepare the dish with French bread. But this time I got the Mini Boule instead. The French word boule means ball or round, so “boule” may be used to describe a variety of breads that all have the boule shape in common. A typical French boule is a hearty, country bread with a chewy crust, an open crumb, and a moderately soft interior and is baked in many different sizes. It is most often prepared with white bread flour made into a similar type of dough used for a French Baguette (narrow French stick loaf); however a variety of flours and other ingredients can be used.


Ingredients:

Pls note: All ingredients used are according to my own taste change the measure as per your taste.

• Whole Bread- 1 (not the slice one. Pls get the bread which looks dense in width.)
• Egg- 2
• Boiled potato- 1 medium size
• Boiled carrot- 1 small or ½ of the medium size
• Chopped colour bell pepper- ½ Cup
• Chopped tomato- ½ cup
• Grated Ginger- 1 tea spoon
• Grated cheese- ½ cup
• Melted butter- ¼ cup
• Italian seasoning- according to taste (Tip: I usually store the seasoning mixes delivered from the Pizza hubs. In need they help to season my preparation perfectly)
• Salt, Sugar, Black pepper- As per taste

Method:-

• First slice the head of the bread in round shape. Scoop out the bread from inside, so that should look like a bowl. Keep the extra bread in a separate container.
• Preheat your oven to 375 F.
• Now take the extra scooped bread. Crumble the bread with your hand. The feel of the texture will be like bread crumbs. Mix all the other ingredients gently except the cheese and eggs.
• Beat the eggs and fold it to the mixture. Pour the whole ingredient into the Bread bowl and cover the lid with the head of the bread slice.
• Grease the whole bread with butter.
• Grease a baking tray, place the bread and set it for baking for 40-45mnts.
• After 10mnts open the oven, remove the top of the bread and bake both separately just placing the bread slice side of the bread bowl. After 15mnts turn the bread slice to the other side.
• When the time is up check the bread stuff with a toothpick or a knife pricked in the centre comes out clean. If it’s done switch off the oven, bring out the tray and sprinkle the cheese on the top of the bread bowl and close the top once again with the bread lid. Put again to the oven and keep inside till the cheese melts down.
• Bring it out of the oven. Cut into thick chunks and serve with salad, boiled vegetables.

Note:

• The baking time I have given is as per my estimate. Your time may take more or less. Just keep on checking the colour of the bread and the Stuffing. If you see that the bread is getting over toasted then just decrease the temperature of the oven and bake it till the stuffing is done.
• The stuffing will flap up a little. Therefore don’t worry.


Variations:-

• You can add boiled chicken in the stuffing.
• Other breads are always welcome. Only they should be not sliced and thin.
• If you want to make it a vegetarian dish. Use corn flour instead of Egg. But be careful about the amount of the corn flour. Use only as much needed for a binding.


Culinary is just an Art of creation. Many a time, we just get a hunch of a recipe and make it in our own kitchen in our own way and as per our taste. But most of the time we create rather than recreate something.
