#EasyRecipe : Strawberry Yogurt

Didn't I say that I would not be blogging for 2 months? Yes, I of course did. My daughter is having her Annual Examination. The lil one is getting day by day a fully hyper-active kid who needs continuous attention and more over organising the upcoming Bakers Showcase 2016 with team KFB is really an arduous task to concentrate and blog. 
Then why am I here today with you all?

Today is Valentine's Day. 
And it gives a good reason to celebrate here. And I have a story behind it too.
I bought few packets of strawberries. Washed, patted dry and reserved few of the fresh ones in the freezer to use them in future. Now I kept one packet of strawberries in the Fridge and decided to experiment on something new soon. I started looking for recipes on  the internet. I searched, saved, pinned endless recipes. Then totally got confused to start with which one. I didn't have too much time to spend for one. So the recipe should be easy and takes very little time (read labour) to make. Suddenly the other day One of my blogger friends, Chandrima who blogs at Not Out Of the Box, posted a picture on Instagram of Strawberry Yoghurt. (Read her recipe HERE.)

I love baked yogurt (mishti doi) mainly with fruits. I made Mango Yogurt, Apple Yogurt and Chocolate YogurtI thought this will be the easiest recipe to do the justice with the strawberries. So I didn't waste much time made the dish. Once you make some dish you can't sit relaxed unless and until you will be clicking some pictures of the dish - Story of a Food Blogger's life. I poured my heart out and enjoyed the photo shoot of Strawberry Yogurt after a long time. I kept on tapping my feet with the click, click shutter sound. My heart melted down when I downloaded the picture, looked at them like a mother keeps on gazing at her kids. Then put them in drafts and thought of blogging on them once I will be active again. But when I saw everybody is celebrating Valentines Day, I couldn't resist myself. I thought it will not be justified if I don't celebrate it with my blog and my readers. So here I am wishing you all a very Happy Valentines day with a simple but healthy and exotic recipe to celebrate this special day where everywhere love is in the air, love is everywhere... 
Ingredients:
Strawberry - 1 cup (chopped)
Yogurt- 1 cup
Condensed Milk - 1/2 cup
Method:
1. Put all the ingredients in the blender and blend.
2. Pre-heat the oven at 180 degree C for 5 minutes.
3. Pour the mixer in a baking dish / ramekins or cupcake moulds and bake at 140 degree C for 40 to 50 minutes.
4. Keep in the oven till it gets completely cool.
5. Chill for 6 to 7 hours. Then serve and enjoy.

Note:
1. Those who are on a diet, please don't add the condensed milk but plain sugar. Or you can absolutely omit the sugar.
2. You can store this flavoured yogurt in the fridge for 4-5 days. Just put it in an airtight container.
3. One can prepare it in single cupcake cups/ ramekins and wrap it with cling fling and store.

Celebrating Birthday with Strawberry Ice Cream

....and another year added to this short span of life and I grew a year older today....Happy Birthday to me.

I never thought that I would ever hate to grow old, but now I am. I am in fear of growing old in each passing years and I am in fear to face the mirror to see that I am growing old indeed. I truly believe that each phase of life has its own charm and beauty. So do I enjoy this phase of life where my days are exploring the childhood once again with my little one. But still, sometimes a hidden aspiration raps my mind, making me totally dunned. In my first twenty years I wished to god, might be every day, to grow old soon. But as I stationed to the Thirty I wished to travel back to the early tracks to enjoy my childhood, student life, college days again and again. Am I the only one to think like this or you are also on the same boat wishing to sail back to the realm of innocence once again!!!

This is the eternal philosophical humdrum, cycles in the human minds in the anticipating fear of getting old. I am no exception nor you or anybody. Today is my birthday and I don’t want to make my mind melancholic any way with this perpetual truth.


In my every birthday, I gift myself something special. I consider my birthday, especially a day of mine, when I am not only special for everybody but very very special for me too. The day of stepping in the world, I love to share specially with my mom, dad and sister. But now it’s not possible as they live on the other part of the world and I am on the other. Thanks to the tele-communication that still made the distance shorter to at least by sharing the voices or watching each other through the webcam. I specially miss my mom, dad and sister on this day too much. Today early in the morning my mom, dad and sister called me and sang the Happy Birthday song and my day became brighter than ever. And when my little daughter gifted me a beautiful card which she made by her own hand with the help of her dad, I got the best gift I owned ever.


So now I have two more special people in my world. The birthday celebrating responsibility now is taken by my husband and our little daughter (who thinks each birthday, whether it’s her mom’s or dad’s birthday, as her birthday) assists him in full of vigour and she will keep on saying –“It’s my birthday party today”. That is the most innocent phase of life, which makes our days brighter and brighter even the dark days too. They gave me a beautiful lunch and dinner outside and a bunch of sweet gifts, include chocolates, tiny little model cars etc.






This time I made Strawberry Ice Cream as a birthday present to me. I wanted to make a cake for me. But all the Ice cream recipes in my favourite blogs made me esurient to take a challenge to delve in the world of frozen afters. This is for the first time I am making Ice cream at home. I was restricted to the fact that Ice cream can’t be made without an Ice Cream Maker. But when few of my fellow bloggers posted mouth-watering Ice Cream recipes on their blogs, I was not able to resist myself to try it out in my kitchen. Luckily I got two boxes of strawberry, in a bargain price of each $.99, where the regular market price here is $ 2.99. I wanted to use them before they start to get pale and rotten. So I decided to make Strawberry Ice Cream. I gone through a bunch of Ice Cream recipes and finally I turned up with a combination recipe of my own taking ideas from there. I bought some colourful mini cones from the market and served the ice cream on them to make more appealing and attractive to my lil one. After making the ice cream, I never thought that Ice cream could be made so easily. So I am too proud to get such a lovely and delectable gift from me, a challenging successful creation which tastes so heavenly and melts down to the mouth leaving a tart sweet creamy savour to grab for the next bite. Here is the recipe....



Ingredients:-
Strawberries- Chopped 3 cups (approx 24-25 medium size )
Condense Milk- 1 can
Yogurt- 2 table spoons

 
 
Method-
1. Blend all the ingredients in to a smooth puree.
2. Freeze for two hours. Then again blend the frozen puree in the mixer. Do the same in every two hours for 3-4 times.
3. Then keep in the freezer over night. You will never believe then that ice cream can be made so easy.
