World Cuisine In a Bengali Kitchen: Mexican Pumpkin Flower Soup (Sopa Mexicana de flor de Calabaza)

Pumpkin Soup, Pumpkin Pie, various curries out of Pumpkins so on and so forth - there are endless dishes that can be made out of Pumpkin. We all know, being a very versatile, most parts of the pumpkin are edible, including the fleshy shell, the seeds, the leaves, and even the flowers. But I never thought in my dreams (Yes, not exaggerating) that one could make such a piquantly pungent soup out of Pumpkin Flowers. I am always in love introducing the flavours of world cuisine in my little Bengali kitchen. When it comes to Pumpkin Flowers, being a Bengali I was brought up tasting only the batter fried pumpkin flowers, most often plucked from our garden. Even after shifting to Kolkata we bought Pumpkin flowers, fried it, dipping in a batter made out of a proportionate mixture of gram flour, all purpose flour and rice flour, till it was crispy and get a coat of a shiny golden hue. We, Bengalis, always need something to pair perfectly while having rice with dal. Say it a tarkari/chochori/dry curry or some oily fritters, a satisfactory meal will not be completed without this. Likewise our daily vegetable routine shopping, the Man bought a bunch of Pumpkin Flowers the other day. This time the Pumpkin Flowers were cooked with an exception. If we talk about the nutritional values of the Pumpkin Flowers, they do have some important vitamins like vitamin A and C and minerals.
From my recent collection of cook books, I was brought in with this recipe. From last few months I was reading on the flares of street food from all over the world with the meticulous accordance. I got acquainted with so many dishes that not only    astounded me but I loved the way the history and stories enfolded them. This Pumpkin Flower soup is basically a famous street food summer soup that widely gets sold in Mexico and its periphery at the street food counters and little cafes. According to Tom Kime, this is a traditional recipe that is fluxing through generation to generation for over almost hundreds of years without any changes in the recipe. The little cafes or the street food stalls would quickly whip up this saporous spicy soup, spiking up with the flavours of Green chilies and the lemon Juice. While cooking this easy dish I found that the main taste dwelt in the tanginess of the lemon juice with the commixture of the pepperiness of the chilies. I read few more articles stating this recipe and found many variations were made. Potato, zucchini, corn can also be used to make this soup. Even I found that there are many recipes on Pumpkin Flower, like stuffing it with cheese or prawns and then battered fried,  etc. So here is the recipe of Mexican Pumpkin Flower Soup (Sopa Mexicana de flor de Calabaza). {Recipe adapted from the book: Street Food by Tom Kime }
Ingredients:
(Yields 2 soup bowls)
Pumpkin Flowers or Courgette (Zucchini) Flowers - 12-14 (small)
Chicken/vegetable Stock - 3 cups (Less or more - See Notes)
Onion - 1 medium
Garlic - 1 tspn (finely Chopped)
Green Chilies - 2-3 (More or less)
Tomato - 2 small
Olive oil - 1 tspn + 1/2 tspn
Lemon Juice - out of 1 lemon
Salt & Balck Pepper as per taste
Method:
1. Discard the stems and the pistils of the Pumpkin Flowers finely chop, except 2-3 flower. Reserve.
2. Finely chop the onion. Grate the Tomato using a grater to get a nice pulp. Reserve.
3. Finely chop the green chilies.
4. Heat 1 tspn oil in a pan. Add the garlic and the chopped green chilies, keeping some for garnishing later.
5. Wait till the garlic turns brown, add the onion and fry till the onions are pale and golden brown. 
6. Add the tomato pulp and cook till it is well cooked.
7. Add the chopped pumpkin flowers and cook for 2 minutes. Cool it and then make puree of it in mixer grinder.
8. Now heat the remaining oil and fry the remaining whole pumpkin flowers till they are wilted and the parts are golden brown. Reserve.
9. Now Bring in to boil the chicken stock. Add the pumpkin flower puree, lemon juice and stir well. Add salt and Black pepper powder as per taste. Pour it in the soup bowls and garnish them with the whole pumpkin flowers and chopped green chilies.

Notes:
1. Make sure the soup tastes better when is semi-thick. Therefore add the chicken stock as per consistency. If it has become too runny then add some corn starch.

Simple Vegetable Pasta Soup

Among all kind of foods, I consider soup as one of the most healthiest, tastiest and the easily made dishes. I am not talking about the canned or the ready-to-make soups but purely the homemade ones. After a tiring day, a bowl of hot healthy soup makes our day to start over again. It helps to regain the power of energy which we have shaded all day long and gives the taste of heaven in just a single sip. Of course if it is a tasty soup the warmth of it is totally uncompromised.:)  

Our dinner will not be completed if a hot bowl of soup is not served. In my parent's house, I could not recall a day when a bowl of soup was not served. My mom is a wonderful cook and I should mention my dad too, whose cooked food make you smacking your fingers and the plate till the end. My mom's way of cooking or rather it's better to say the motto of cooking is "Less spice makes healthy foods". Dad's motto of cooking is "More spicier more tastier". From my mom, we (my sister and I) learn the traditional Bengali cooking and from dad, we learn the fusion style of cooking and also at the same time we are introduced with the different tastes of the world which our dad loves to experiment in his free times and we love to devour them in no time.
So my sister and I are grown up in the custom of gutting all kind of foods and both us, for this reason, grow up a passion to taste and cook any kind of food. But this tradition, of having a bowl of soup before dinner, vanishes for meanwhile when I got married. In my In-laws' house a bowl of soup is more fancier than a habit. So after I became little quondam in there, to introduce my own choices, the first thing I started the soup before dinner. Now it has become a wont for my hubby and for my daughter, to make their meal satisfied if they have a bowl of soup prior to the main course meal.
 When I was going through my recipe list I found no soup recipe is listed yet. That means no post on any soup. So today I am going to post a soup recipe which is very easy to make, filling, refreshing and comforting in anytime.
Simple Vegetable Pasta Soup
Ingredients:-
Vegetable Stock/ Water- 3 cups
Boiled Pasta- 1 cup
Assorted Vegetables cut in to small pieces - 2 cups (Like- Green Peas, Beans, Carrots, Bamboo shoot, spinach, etc. )
Spring onion/Scallion separated- 4 sticks
Garlic chopped- 1 table spoon
Ginger chopped- 1 tea spoon
Salt , Sugar and pepper- As per taste
Vinegar- 1 tea spoon
Oil/Butter- 1 tea spoon
Method:-
1. In a deep dense pan pour the stock/water, the vegetables and vinegar. Add salt as per taste and boil till the vegetables become semi tender. Take it off the stove and reserve.
2. In another pan heat the oil/ butter. Add the garlic, fry till it turns brown. And the white part of the scallion and sauté for 2-3 mnts. Add the ginger and the pasta. Fry for a minute. Add a pinch of salt, sugar and pepper. Then add the green part of the scallion and pour it in the reserved soup. Boil for couple of minutes. Serve hot and enjoy.
Note:

1. If you want make it a nonveg sopu then use chicken broth in stead of vegetable stock.
2. Add boiled chicken and fry it along with the garlic. And add an egg at the end of cooking the soup to give the texture of an egg drop soup.
3. If you want make it little bit hot add a finely chopped green chilli along with the garlic.

Stuffed Pasta Shell Salad


Ingredients:-

Jumbo Pasta Shells- 12 shells
Chicken Breast-3 chunks
Boiled egg- 2
Salad Leaves- 2 cups
Baby Carrots- 1cup
Green Beans- 8-9 sticks
Grape Tomatoes- for decoration (4-5)
Tomato – 1 medium size
Cucumber- 1 medium size
Broccoli—4-5 medium sized florets
Shredded cabbage- for decoration
Italian Salad Dressing- 2 tea spoons
Mayonnaise- 1 table spoon
Italian seasonings- according to taste
Salt- according to taste
Black pepper- according to taste

Method-

Step I: - Boiling-
1. Boil the pasta shells till they get tender and soft. Keep on checking not to overcook.
2. Boil the chicken breasts, till they become fully soft, adding salt to taste.
3. Take the chicken out of the stock and keep aside. Boil the baby carrots, green beans and broccoli in the leftover chicken stock.
4. Cut the boiled egg in to two halves and scoop out the yolk.

Step II: - Mixing-

A. The stuff for the Pasta-
1. Take a mixing bowl and add the chicken breast and the egg yolk and mash and mix nicely.
2. Cut the skinned cucumber and the tomato in to small cubes and pour in to the mixing bowl.
3. Add Mayonnaise, Black pepper and the Italian seasoning to the mixing bowl and mix all the ingredients very nicely.
B. Salad Bed-
1. Cut the salad leaves in to cubes. Toss into the Italian dressing and keep aside.


Step III- Presenting and Garnishing:-
1. Stuff each jumbo pasta shell with the chicken mixer very carefully.

2. Take a serving dish. (I prepared this dish to honour Valentine’s Day. I wanted to present the dish in a heart shaped serving plate. But a matter of regret I didn’t have any. So I used the silver foil. Made a heart shape out of that and placed it in a serving tray.) Make a bed, spreading the salad leaves on the foil.

3. Now it is up to you how creatively you can decorate the salad. I lined up the heart shape with the stuffed pasta shell and tried to fill up the empty space with the concept of bird’s nest, using the grape tomatoes, halves of the egg whites and the boiled vegetables.

Thus your salad is ready. You can also have it with the coleslow salad. It’s very filling and healthy. Nowadays whenever I cook anything, I always keep in mind, whether my 2 and 9mnths old daughter will have it or not. And this time she didn’t dishearten me. Along with my hubby she liked it too. It’s very easy and takes very little time to prepare. It is also a good choice for the Lunch boxes.

Note: If you don’t get the jumbo pasta shell, you can use the normal easily available pasta shells. Only try to buy the shells to the bigger size.
